The program pits ten young chefs against each other whose goal is to win a place in the kitchen of Villa Crespi, a restaurant of chef Antonino Cannavacciuolo, who is both teacher and judge in the program.
The chef is joined by Simone Corbo, his second at Villa Crespi, in the role of tutor to the boys.
Each episode (with the exception of the final) represents an educational cycle and is divided into three phases: the lecture by Chef Cannavacciuolo, the outdoor test, and the in-depth study (held by a distinguished guest chef). During each phase, contestants will have to create dishes based on what they have learned, respecting a certain theme and often using particular ingredients. At the end of each round, each contestant will be assigned a grade. At the end of the episode, the contestant with the lowest sum of ratings will have to leave the academy.
